Tell us about Coco bakes!  What led to the production of your brand? Coco bakes started out of necessity. After coming back from Le Cordon Bleu Paris, I knew I had to change my diet. I felt lethargic and almost always sick. I began by cutting out dairy and even though I LOVE cheese it was pretty easy for me. I still felt unwell so I cut out gluten, and let me tell you, working at Huckleberry and cutting out gluten was not easy. I think I ended up eating a gf carrot muffin every day for months.
